Tasso (Beef Jerky)
Tasso known to many as Beef Jerky is lean meat that has been trimmed of fat, cut into strips, and then dried to prevent spoilage. Normally, this drying includes the addition of salt, to prevent bacteria from developing on the meat before sufficient moisture has been removed. The word “tasso” is derived from the Amerindians which means “dried, salted meat. All that is needed to produce basic “tasso” is a low-temperature drying method, and salt to inhibit bacterial growth.
This is used by the vaqueros as their meat when out on their round up and on various tasks on the savannahs and are overnighting.
Tapioca
Tapioca is a starch extracted from cassava root (Manihot esculenta). This species is native to North Region, Brazil but spread throughout the South American including Guyana and the Rupununi.
A staple food in the Rupununi and in many world regions, tapioca is used in many forms including porridge and pudding.
Casreep
Cassareep is a culinary ingredient made from cassava root, often with additional spices, which is used as a base for many sauces and especially in our local pepperpot. Besides use as a flavoring and browning agent, it also acts as a preservative. Its antiseptic characteristics have led to medical application as an ointment, most notably in the treatment of certain eye diseases.
Cassareep is used for two distinct goals, that originate from two important aspects of the ingredient: its particular flavor, and its preservative quality.
Cassareep is essential in the preparation of pepperpot, and gives the dish its “distinctive bittersweet flavor. Cassareep can also be used as an added flavoring to dishes, “imparting upon them the richness and flavour of strong beef-soup.
A peculiar quality of cassareep, which works as an antiseptic, is that it allows food to be kept “on the back of the stove for indefinite lengths of time, as long as additional cassareep is added every time meat is added. According to legend, Betty Mascoll of Grenada had a pepperpot that was maintained like this for more than a century. Dutch planters in Suriname reportedly had pepperpots in daily use that they kept cooking for many years.
Cassava Bread
Cassava bread is a staple food in many Amerindian villages in Central and South America. The Rupununi is no different. Cassava bread as the name implies is made from cassava and eaten with many dishes including pepper-pot.
Cassava bread has a much longer shelf life than the cassava root and when it is not exposed to moisture can be kept for several years.
Farine
Farine is a fine meal prepared from cassava and is used as the main staple in the diet of the ameindian villages. Farine is eaten with various stews and used also as a type of porridge.
Leather & Leather Products
A by-product of our cattle is skins, which we craftily turn into various leather products; here our vaqueros get all their “tools and equipment” necessary for rounding up the cattle and our guests get various souvenirs, a memoir of their visit to Dadanawa.
